Every time we went to Kentucky, Aunt Cissy would fix corn pudding, Dad’s favorite. She often made it with the “Silver Queen” corn that he had grown in his garden and Mom had so carefully put in the freezer. It
just takes 2 cups of corn but to get the best, it was truly a labor of love (cut off cob and milk ).    According to Cissy, if it’s not fresh or properly frozen tender sweet white corn (Silver Queen or Tendertreat), “it’s not worth wasting the rest of the ingredients.” Don’t use frozen whole kernel or canned.
For fresh CORN ON THE COB, Dad simply refused to go pick it until he knew the water was boiling. That’s how picky he was, but you don’t have to be. Fresh corn in season from the farmers market will do. Cut off the cob or frozen fresh makes Cissy’s Corn Pudding a special treat.
